The very popular blue cheese, NIVA, with blue beneficial fungus Penicillium roqueforti inside the material is produced for OLMA by Mlékárna Otinoves.

The milk for production of this cheese comes from the protected areas of Drahanská vysočina and Moravský kras. The cheese takes 5 weeks to mature and this takes place in rooms with precisely given climatic parameters. NIVA is intended for direct consumption, it is suitable for preparation of spreads, sauces and for baking, as well as being popular when fried.
